This is an anytime- easy to make carrot cake with the ingredients available at home.. Once again I tried this with my own recipe

Ingedients :

Carrot -2 robust ones grated to small
All purpose flour -1 & 1/2 cup
Sugar powdered - 1 cup
Baking powder -1/2 tspn




Orange red Food colour - less than a pinch
Vanila essence - 1/2 tspn

Eggs -3 nos
Curd (set one) 1/4 cup
Milk -1 cup
Butter  50 gms
oil - 2 tspn

Seive together flour, baking powder and food colour. Leave it undisturbed

Beat powdered sugar and butter to thick foamy layer. Add only egg yolks now and beat. after it is foamy add egg whites. Beat to a foamy mix. Add the essence and mix well. Add milk and beat again.Now fold in the dry powders carefully without lumps. Finally mix the grated carrot and fold in (do not beat now).Finally add 2 tspn of oil on top of the batter and mix. grease a butter paper with some more oil and pour the batter on top of it on a baking mould. garnish with raisins/nuts as prefered


Bake in the preheated oven for 30 minutes

Rich chocolate coffee cake with chocolate pudding on top.


This cake tastes exactly like the store bought plum cake without adding plum and rum :)

Once again I tried using my own recipe. and here is how I made this
Ingredients:



Maida -1 & 1/2 cup
Sugar powdered- 1 & 1/2 cup
Chocolate powder - 3/4 cup ( I have used the drinking chocolate for this)

Coffee powder - 4 tspn ( If it is an instant coffee powder u can add as such or if it is otherwise you have to powder it in a mixer and add)
baking powder- a pinch
Baking soda - a pinch


Egg -2 nos
Curd -1 cup (set curd or strain the normal one for sometime to remove the water)
Butter - 100 gms
Cheese grated -100 gm
Oil - 4 tspn + for smearing the  mould
Chocolate essence -1 tspn
Tuti fruiti /kismis and almond bits - 2tpns each (optional) .Mix it with the sieved powders

Method Sieve together Maida, and baking powder and baking soda (2 times), also sieve chocolate powder and coffee powder. After sieving do not disturb the powder.

In a thick vessel mix thoroughly powdered sugar and buter, beat and make fluffy. Add grated cheese too and beat well.  Break the egg and seperate the egg white in another small vessel and add the egg yolk to the beaten mixture of sugar and butter. Beat again very well till foamy. Not add the curd and beat again. Add the egg white towards the end and beat. Add chocolate essence. now fold in the sieved powder ingredients . do not beat.just fold in. Finally add 4tbsp of oil to give a glossy look. If the batter is too thick u can add 1/2 cup of milk too.

Preheat oven at 200 deg and pour the batter on to a mould smeared with oil. Bake for 40 minutes or till the skewer cums clean.

Decorate with chocolate pudding as done in the picture.

Rich dark chocolate cake

Chocolate is the favourite of all irrespective of any age they are in. there are lot many favourites of cooking available with chocolate and cakes and cookies are the top among them. 

I have tried this choco cake with the drinking chocolate powder and it was so awesome in taste that it was melting in the mouth. We all enjoyed the richness of the flavour and taste of this cake.

Here is the recipe I used for making.


Maida/all purpose flour - 2 cup
Baking powder -1/4 tspn
Baking soda- 1/4 tspn
Salt -a pinch

Sieve all these dry ingredients 2-3 times and keep it aside undisturbed. Add 3/4 cup chocolate powder. 

If chocolate powder is not there you can use chocolate bars or cooking chocolate as per your sweet tooth. If using bar chocolate, melt the chocolate in boiling milk and allow it to cool and bring to room temperature before making the cake. Please note to adjust the amount of milk in the recipe if using chocolate bar.

Sugar -2 cups powdered
Eggs -3 nos
Curd (thick) -1 cup
Milk - 1/2 to 3/4 cup
Butter -150 gm
Chocolate essence -1/2 tspn

Beat butter and powdered sugar till nicely blend. Beat again till slightly fluffy. Separate the egg whites and yellow and add yellows to this mixture and again blend.Beat till the mixture is fluffy and soft.Add curd to this.beat again, followed by milk. Finally add egg whites and beat. When butter seperates from curd on top add chocolate essence. Mix well. 

Now slowly fold in the dry ingredients. If you wish to add chopped nuts or tuti-fruti bits or raisins or any other fruit bits of your choice to this mixture, mix it with the dry ingredients and then fold in for uniform distribution. Mix well till no lumbs are formed. Note: do not beat but just fold in. 

Preheat the oven at 200 deg centigrade.  

Grease the baking tray with oil and dust with flour uniformly.  Pour in the batter ,spread it uniform in the tray and bake for 40 minutes or till the skewer comes out clean.. Cool and remove from tray once it is done.Enjoy.

Orange cashew cake with chopped nuts inside and chocolate Icing

Special cake for the special one :D

On my husband's birthday I was thinking about which cake to bake. This time also didnt want to go by any recipe and wanted to try something by my own and finally we both (me and my son) decided to bake this super yummilicious cake for papa.





Ingredients required:

All purpose flour (Maida)- 1 cup
Wheat flour (Atta) -1/2 cup
Baking powder -1/4 tspn
Baking soda -1/4 tspn

Sieve the above ingredients through a narrow meshed sieve. And repeat the process twice as it helps in giving better aeration to the flour and thus making the cake softer.

Chopped nuts - 1/4 cup
Mix well the nuts with the flour. Keep it aside.

Other ingredients required are

Orange juice fresh -1 cup ( of one big orange). I have used the fresh one to get better taste
Sugar -1 & 1/2 cup powdered
Egg -3 numbers (separate the yellow and white)
Curd -1/2 cup + milk 1/2 cup (Total 1 cup)
Butter -100 gms
Cheese -50 gms
Orange food colour -less than 1/4 tspn
Orange essence - less than 1/4 tspn .

For icing :
The ingredients required are Icing sugar, butter, fresh cream and chocolate bar. Melt the chocolate bar in milk and make it thicker and can use. the quantity you can use as required.

Mix butter + cheese and powdered sugar and beat well till fluffy.  Add egg yellow and beat it again. Add curd + milk and again beat. Add the food essence and beat again. Finally add the food colour and egg white. beat again till light . fold in the sieved batter and mix till no lumps are there.

Grease the pan , dust with  flour and pour the batter and bake in a preheated oven at 200 degree for 30 minutes or till done.

Rich chocolate moist wheat cake with dates and almond filling.

Just tried this recipe out of my own imaginative recipe and added the ingredients that I liked to bake this cake. Was doubtful till the cake was fully baked about how it will come out. But to my surprise it came out nice and yumm. Thanks to God  for that :D

With rich cream chocolate icing and cherry and cashew nuts decorated on top
Well Now here is the recipe how I made this

Wheat flour ( Mixed grains atta) - 1 & 1/2 cup

Sugar powdered - 1 cup
Milk - 1 +  1/2 cup
Cooking chocolate - 100 gms
Butter- 100 gms
Egg -1  full (including white and yellow)
Thick curd or yoghurt - 3/4 cup
Coffee powder -1 tspn
Hot/boiled water- 1 cup
Dates- 10 nos chopped thin
Almonds -chopped to bits -2 tspn
oil -2 tbpn
baking powder-1/2 tspn
Baking soda- 1/2 tspn

1) Seive the flour, baking powder and baking soda.

2) In another vessel mix butter ( room temperature) with powdered sugar. Beat till fluffy. Add one egg and continue beating.
3) In a pan boil  1 cup milk , add the cooking chocolate into it and dissolve completely by mixing.
4) Add 1 tspn coffee powder to the boiled water (1 cup) and allow it to rest till the coffee dissolves in.Once it is thick black strain and keep the coffee decotion aside.
5) Using another half cup milk grind the dates bits in a mixer.
6) When all these come to room temperature mix everything together one by one.
7) Finally add the curd.
8) Fold in the dry mixture ( flour+baking powder+ baking soda) to the wet mix. Beat everything thoroughly till no lumps are formed
9) Add 2 tbsp of oil atlast just before pouring in to the tray
10) Grease a baking tray with oil and pour in the batter
Bake in a preheated oven @ 200 deg C for 25-30 minutes ( Time can be adjusted according to you oven settings or bake till the skewer inserted in the cake comes out clean )

Allow it to cook and use the icing of your choice to decorate.

Patriotic Cake - Butter scotch flavoured ( No offense please)

This is just a tri colour cake in tribute to our National flag. No other offense or indiscipline towards our Patriotism. Made this on a Republic day as everywhere people roam around in tri - colours, make recipes with tricolours. This one I made using a cake. On cutting this cake also instead of one many tri colurs are got... Jai Hind.


Am glad to share this as I won the recipe/photograph competition  (First Prize ) for this cake anc picture.Here is the recipe for this:

Butterscotch flavoured one with milkmaid and butter with glazed icing.

Cake Flour -2 1/4 cup
Butter -150 gm
Milkmaid- 1 tin

Egg -4 nos
Milk -1 1/4 cup
Baking powder -1 1/4 tspn
Butterscotch essence/flavour -2 tspn
Salt -1/2 tspn
Food colour -1 tspn each of Orange red/ Keasaricolour and green

Beat together butter (at room temperature) and milkmaid till smooth and fluffy. Beat eggs in milk and add the flavouring to it. Seive together flour, baking powder and salt. Slowly mix the flour mixture to Butter milkmaid mixture. Pour in milk -egg mixture slowly. Mix everything well and seperate in three bowls. Add the kesari colour to 1 bowl and green colour to another one 1 tspn each. The third one is colourless
Preheat the oven at 180 deg celsius and bake the middle layer first for 15 min. and followed by the other layers. Allow them to cool before setting .

For glazed icing:
-------------------
Icing sugar -200 gm
Butter 1 tbspn
Warm water -2 tbspn
Mix butter with icing sugar and add warm water to get a glaze. spread it on the middle layer first and arrange the other layers.

This cake as such is of medium sweetness but the glaze icing in between gives the perfect sweet tasteness required. You can add 1 1/4 cup of sugar if milkmaid is not available..

Vanilla wheat cake

Vanilla flavored pastry cake made using wheat flour and chopped almonds with apple green icing and grated chocolates

 Recipe :

----------
Wheat flour - 180 gms
Sugar (powdered) 180 gms
Eggs -4 nos
Butter melted to room temperature -100 gms
Vanilla essence -2 tspns
Baking powder -1 tspn
Chopped almonds and tuti fruiti - as per ur taste

For icing
-----------
( can follow the instruction on the pack for making cream) OR
Icing sugar 100 gms
butter-50 gms
Vanilla essence -1 tspn ( I used strawbery flavour for icing)
Food colour of ur choice - a pinch
Milk to make it pourable consistency

Method
---------
Sieve flour, sugar and baking powder.
Beat the egg white separately in a bowl until it becomes thick cream like texture.Beat the egg yolk in another bowl till it starts foaming. add butter to this and beat again so that it will become a thick texture. Now add essence and beat again. slowly add wheat flour and keep on mixing till there is no lumps seen.Mix chopped almonds and tuti fruiti

grease the tray and springle some chopped almonds on to the plate. Pour the cake mixture. keep it on preheated oven (180 deg) and bake for 35-40 min or till the knife inserted comes out clean..
Allow the cake to cool
For Icing
--------------
Mix Icing sugar with butter. beat thoroughly . Add essence, and milk and make it to a pourable consistency.Pour it over the cake when cake is cooled. Allow the icing to set (approximately 1/2 hr)

Decorate with grated chocolates- white and dark . Decorate as per your imagination :-D

Mango Cake

This is my own innovation using mango pulp . No essence or artificial colours are used in this.


Recipe:
------
All purpose flour (maida) -1 1/2 cup
Sugar - 1 & 1/2 cup Powdered
eggs -3 nos
baking powder- 1 tspn
butter -1 cup full (at room temperature)
sunflower oil -1/4 cup
Fully ripened mango - 3 small
milk just enough to make the mango pulp to a smoothie.

Peel and slice the mangoes and make a smoothie out of it. sift together maida and baking powder. beat butter and sugar till fluffy, beat eggs one by one with this mixture. Add mango pulp and again beat together. Add the flour-baking powder mixture slowly and beat till no lumps are left.

Grease a baking tray and bake at 180 deg for 30 -35 minutes .Cool the cake . you will get a rich yellow colour mango flavoured cake.No extra essence is added in this as the flavour of mango stands out in this cake.

For cream icing
-----------------------
Fresh cream 100 gm
icing sugar -150 gms

beat the cream and icing sugar together and spread it on cooled cake. I have added less than a pinch of yellow food colour also to the icing mix. wait till icing is set and refrigerate for one whole day

Strawberry cake

This is one of my favourtie cake among the cakes I have made so far.. Can say its the best I have made with icing on top.. I made this on demand by my 4 yrs old son and we loved tasting it.

I made a small cake with just 1 cup flour .you can adjust the quantity according to you requirement.

Maida -1 cup
sugar powdered -1/2 cup
Yoghurt -1/2 cup (thick without water)
butter and oil( together) - 1/2 cup
baking soda -1/2 tspn
strawberry essence -1/2 tspn
red food colour - 1/4 tspn
Milk -1/4 cup

Method:
-----------
Beat yoghurt for few seconds till it become creamy. Add butter to this and beat again. Add oil and beat. finally add sugar. beat for few more seconds till it is completely dissolved. add essence and food colour and mix
Add sifted flour and baking soda to this mix slowly.. slowly fold in till everything is thoroughly mixed. Add milk slowly to loosen the batter

grease a baking pan and pour the mix evenly on the pan. bake in a preheated oven @ 180 deg for 25 minutes. ( adjust the oven temperature according to your oven settings or bake till the skewer comes out clean)

Icing:
Beat butter and icing sugar together ( can mix it and keep in fridge a day before also). Spread it evenly on cooled cake.

Eggless Cheese cake with Curd

Recipe courtesy to my friend nitu didi.(cooking with Nitu.)
Its a very soft and melting in mouth cake. I tried this with chocolate sauce on top and its really yumm.. very easy to make.
Here goes the recipe

150 grams crushed biscuits mixed with 60 grams of melted butter, put it in the base of a spring form tin and press gently with your fingers so it sets we.. Mix 375 grams of thick dahi with 1 small can of condensed milk and pour it on top of the crushed biscuits and put it in a preheated oven at 180 for 15 mins. Cool the cake and then spread chocolate sauce on it and refrigerate. To make chocolate sauce melt the chocolate bars with little milk and spread it on top of cake
