Aloo Methi Chicken

Sometimes I just enter into crazy cooking mixing one or two vegetables together and making a new dish.. Tried Aloo-Methi and Chicken together and was awesome. 
Herez the recipe for it

Chicken - 500 gm meat
Potato -2 nos
Onion- 2 big
Garlic- 2 tspn
Ginger -1/2 inch sliced
Curry leaves -few
Methi (Kasuri methi) - a handful

Mrinate the chicken and potato with salt, ginger garlic paste, 1/2 tspn turmeric, 1 tspn red chili powder, 2 tspn coriander powder, 3 tspn chicken masala. Note Both chicken and potato are marinated together..Keep it for 1-0-15 minutes.

cook this meat separately till both chicken and potato are done

In a kadai heat some oil, crack mustard seeds, methi seeds, saunf and add kasuri methi elaves ot it till nice aroma comes. Saute one by one sliced onion, garlic and ginger and curry leaves. Once it is done mix the cooked chicken to this. Add water of to get the required consistency and adjust the level of salt. Allow it to boil once again till gravy is thick.

Ginger Chicken

This is a very spicy dish that I made out of my own imaginations. there are so many ways in which we can make non veg items.. Hai na? .. well thats so cool..and I am one such a person who always love to do my own crazy imaginations and bring about twists :))))




Ingredients
3/4 kg chicken (cut into small pieces)
2 chopped onion

3 big pieces of ginger .Remember to grate the ginger than chopiing
Garlice cloved - of 1 pod
Curry leaves -few
Fenugreek seeds -1/4spn
Salt to taste

1 tsp soy sauce
1 tspn garlic sauce
1 tspn tomato sauce
1 tbsp vinegar
3 tbsp corn flour
Oil for frying

For marinating
..................
2 tsp lemon juice
1 tsp red chili powder
1 tsp garlic paste
2 tspn ginger paste
1/2 tsp cumin powder
1 tsp gram masala powder
1/2 tspn turmeric powder
1 tspn pepper powder
Salt

Method
--------
Marinate chicken for 1-2 hour in refrigerator.
Now mix corn flour on the whole chicken mixture and fry the chicken in required amount of oil. before frying aadd 1 tspn of grated ginger to the oil so that the chicken pieces absorb the flavour very well
heat some oil in another pan , add fenugreek seeds and add onion, saute for 3-4 minutes on a low flame.
Add grated ginger and garlic saute for few seconds, add soya sauce,garlic sauce and tomato sauce. Add vineager.

Cook for 2-3 minutes and add fried chicken pieces , Saute till the mixture coats the chicken nicely.
Cook till the chicken is done. Add half a cup of water. You can have a little gravy if you want or can make it dry according to your taste
Remove from fire once chicken is done and then put some grated ginger pieces and fried curry leaves on top.

Spinach Chicken

Recipe:
-------
Spinach -Half bunch chopped thin
Chicken meat without bones -250 gms
Onion -1 big
Capsicum -1/2
garlic -10 cloves
soya sauce -1/4 tspn
green chilli cause -2 tbspn
chilli garlic sauce -2 tspn
vineager -1/2 tspn



Chop the spinach and dry roast it in a kadai till all the water is evaporated.
Marinate chicken for 1 hr with salt, chilli powder, ginger garlic paste and gharam masala/chicken masala

Maida 2-3 tbspn
Corn flour -1 tbspn
salt as required
Green chilli sauce-1 tspn

make a paste of maida and corn flour with little salt and green chilli sauce and dip the marinated chicken pieces and deep fry in oil till golden brown. drain the oil and keep it aside.
In a separate pan heat some oil add chopped garlic, cubed onions and capsicum and saute for few seconds. Add spinach now and saute in oil. Add the chicken pieces and the sauces and vineager one after another. serve hot with white rice.

Kutti boneless kabas (means small kababs) of Chicken

Made this for my son . I have used ready made masalas for this. you can follow the below recipe to make it in a similar way.

Ingredients required
----------------------
Boneless chicken 200 gms cut to small pieces
Corn flour -2 tbsp
Chilli powder -1/2 tspn
Ginger-garlic paste- 1/2 tspn each
Salt -as required
chicken masala -1 tspn
lemon juice - juice of half lemon

Marinate chicken with all these and a pinch of food colour for 10 minutes. If you like to keep it for longer time then you need to keep it in fridge thus preventing the water oozing out of chicken pieces.

Deep fry in oil and serve hot. Garnish with fried curry leaves

Honey Glazed Chicken with a difference.. see the recipe for more details

Just tried this out of my own imaginations.. There is some specialty in this honey glazed chicken this is made without frying the chicken pieces and have used very less oil.. Have to say it tasted superb . 

Here goes the recipe.

Marinated chicken with turmeric powder, Red chilli powder, 1/2 spn of coriander powder, ginger garlic paste and kabab masala (hence this reddish colour to the meat) and salt for few minutes

Onion -2 big
capsicum -1/2
garlic- 10 cloves chopped small
coriander leaves for garnishing
Tomato paste -100 gm
tomato sauce- 1 & 1/2 tspn
Honey -2 tspn
Lemon - 1/2 slice

Cook the marinated chicken in 2 cups of water till the meat is properly cooked and dry. In a kadai heat some oil (2 tsbsp) and add cubed onions and garlic .once the raw smell is gone add capsicum. saute for few seconds and then add the cooked chicken pieces to it. Now add tomato paste and saute well. Add tomato sauce. Once the sauce and paste is mixed well with the meat and it is dry add honey and saute. Finally squeeze lemon juice over the top and mix well. I made it very dry got it the same restuarant like taste too.
Tips to enhance its taste never put the lid on in between sauting. also saute well and make it fully dry so that it tastes too good and a bit crispy too.
