Cauliflower Kurma

Kurmas are generally made with a blend of fresh masalas and coconut. I have used Cauliflower, green peas and potato to make this Kurma.I love to have this with Kerala Appam. We serve it with Rice and parathas too


Cauliflower -1/2
Dip the florets in hot/boiled water for sometime
Potato -1 big
Green peas -1/2 cup
Tomato -1 medium
Onion - 1 medium chopped
Garlic -5-6 cloves
ginger -1/2 inch chopped

Cardamom - 1no
Cinnamon -1/2 inch stick -1
Cloves -1 or 2
Saunf /perumjerrakam -1/2 tspn
Grated coconut -1 cup
Turmeric powder- 1 tspn
Red chilli powder -1 tspn
Coriander powder - 3 tspn
Grind together all these with 1 or 2 small onions and 4-5 garlic cloves to a smooth paste.

Cook together all the vegetables except onion and garlic.
In a kadai heat some oil, crack mustard seeds, saute the chopped onions, garlic and ginger. Add the cooked vegetables, add the coconut paste and required amount of water. cook till gravy is semi thick. Adjust the amount of salt required. Serve hot
