Baby Corn Stew with paalak.

How to make use of this baby corns left in my fridge. Have tried the fries version of it earlier. So dont want to fry it again as being calorie conscious. Tried making sabjo out of it with mushroom and alone.. Wanted to try something in a different way. So thought will make it with coconut milk. Finally decided on the stew. To get that colourful appearance have added few chopped paalak leaves too.Here goes the recipe:

Baby corn - 1 pkt
Paalak - 2 tbspn (leaves chopped)
Onion -1 big
Garlic cloves - 5-6 nos chopped
ginger -1/2 inch sliced thin
Green chilly -2-3
Crushed pepper - 1tbspn
Curry leaves - few
saunf - 1tspn
cloves- 2 nos
cinnamon -1 inch size slit into 2
cardamom -3 nos
salt and oil as required
Coconut milk -200 ml



Heat oil in a pan, add saunf, cinnamon, cloves, cardamom one by one. Also add chopped onion, garlic, ginger, green chillies, and saute till the raw smell is gone. 

Add baby corn now and saute till oil is coated on all sides and half cooked. Now add paalak. Saute till water comes out of leaves. Close the lid and allow the baby corn to cook in that water.Sprinkel some salt on top. Reduce the flame to medium/simmer

Finally add the thick coconut milk and wait till bubble comes. . Simmer the flame once again and close and cook . Pour some oil (1 tspn) over the top once the gravy is thick. 
Serve hot with rice/roti.
